Ingredients

  • 1 x 900g Tomahawk steak
  • 1 tsp goose or duck fat
  • Sea salt
  • Cracked black pepper

Instructions

  1. Fire up your grill and begin to build your embers. Prepare the grill for direct cooking over high heat (230°c to 250°c). The embers should be covered with a light layer of white ash with a golden glow.
  2. Remove your steak from the fridge and allow it to come to room temperature before cooking, approximately 30 minutes.
  3. Massage the meat with the fat, and season generously with sea salt & cracked pepper just before grilling
  4. Grill the steak using the 'direct heat' method, placing the meat directly above the burning embers.
  5. With the lid closed, cook to your desired doneness. To ensure even cooking use the 60/40 method. Cook for 60% of the time on the first side, then 40% for the other.
  6. We recommend a 20-minute cooking time for medium rare, turning once after the initial 4-5 minutes. If you have a probe to hand, look for an internal temperature of 52°c to 54°c.
  7. Remove from the grill and let rest in a warm place for minimum 10 minutes before serving.
