Stuffed BBQ peppers are an easy and colourful side dish that cooks directly on a Konro or Asado grill. As they cook, the peppers soften and develop a natural sweetness while the filling melts and picks up a light smoky flavour from the BBQ. They are simple to prepare, require only a few ingredients, and can cook alongside your main dishes without much attention. Ingredients
- 3–4 bell peppers
- 120 g grated cheese (cheddar or mozzarella)
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 2 tbsp breadcrumbs
- 1 tbsp olive oil
- Salt and pepper
- Optional: herbs, feta, or cooked chorizo

Instructions
- Cut the peppers in half lengthwise and remove the seeds.
- In a bowl, mix the cheese, onion, garlic, breadcrumbs, olive oil, salt, and pepper.
- Spoon the mixture evenly into the pepper halves.
- Place the peppers in a foil tray or directly on the BBQ with the skin side down.
- Cook over medium heat for 15–20 minutes with the lid closed if possible.
- The peppers are ready when they are tender and the cheese is melted and lightly browned.
Tip: You can customise the filling by adding chopped herbs, feta cheese, or cooked chorizo for extra flavour.
