Hardwoods
The TL;DR version
- Use Hardwood - Oak, Ash and Beech are ideal
- Pick smaller logs - 20-30cm splits
- Ensure logs have a low moisture content, ideally between 10-20%
- Choose logs you know are from sustainable sources
Hardwoods like oak, beech, and ash are ideal for Asado grilling, providing a steady burn and a rich, smoky aroma that infuses your food with unbeatable flavor. Stay away from soft or unseasoned wood as you won't get the temperature and will likely create an awful lot of unpleasant smoke! The preferred dense hardwoods produce longer lasting embers, perfect for both slow cooking and high-heat grilling, giving you the flexibility to experiment with different cooking styles.
Size of log is also key. You're aiming to go from log to ember relatively quickly, allowing you to distribute those embers and create your cooking zones. If logs are too large they will take a while to breakdown and slow down your cook.
We recommend 20-30cm hardwood splits with a low moisture content, ideally around 10%. These can often be listed as Pizza Oven Logs but are ideal for use on Asado Grills as well.
British Charcoal
