Ingredients

  • 1 x 1.2kg Free Range Spatchcock Chicken
  • 3tbsp Olive Oil
  • 2tsp Smoked Paprika
  • 1tsp Garlic Powder
  • 1tsp Onion Powder
  • Sea Salt & Crushed Black Pepper
  • F&Co Middle Eastern BBQ Glaze

 

Cooking Method

  1. Remove the chicken from the packaging and allow 20 mins for it to come to room temp.
  2. Pat it dry thoroughly – this ensures you’ll get crispy skin. Rub it all over with oil, paprika, garlic powder, onion powder, salt, and ground black pepper.
  3. Fire up your grill, build your embers, preheat to 170°c, and set up for two-zone heating.
  4. Place chicken on indirect heat side of the grill and cook for approximately 30 minutes.
  5. Remove your chicken from the heat and generously cover with Middle Eastern BBQ Glaze
  6. Place chicken back on indirect heat for another 10 minutes or until the internal temperature reads 63°C
  7. Remove from the grill again and cover with more of the BBQ glaze
  8. Transfer chicken to direct heat side of the grill. Leave on direct heat for 5-7 minutes, or until the internal temperature reads 72°c
  9. Remove from heat to cutting board and allow to rest for at least 10 minutes then serve.
