Ingredients
- 2tbsp Olive Oil
- 1 Courgette, thickly sliced
- 1 Red Onion, cut into wedges
- 1 Red Pepper, cut into chunks
- 1 Yellow Pepper, cut into chunks
- 12 Brown Mushrooms
- 12 Cherry Tomatoes
Instructions
- Firstly, prepare your veg. Wash and cut all of your chosen vegetables into chunky pieces, button mushrooms may not need cutting.
- Next thread onto the skewers, alternating the veg for a rainbow affect. These steps can be done the day before, to save time on the day.
- Brush with oil and season with salt and pepper.
- If you haven’t already, fire up your grill, build your embers, and prepare a medium heat.
- Cook the skewers for 25-30 mins, regularly turning to ensure they are cooked on all sides.
- Once browned and slightly softened, remove from the heat and serve immediately.
