Sweet, smoky and packed with flavour, this charred corn with lime butter is one of the easiest sides to cook over live fire. Whether you're grilling over wood embers on an Asado or cooking over binchotan on a Konro, the high heat creates beautifully charred kernels while preserving the corn's natural sweetness. Finished with rich lime butter and a touch of heat, it's the perfect accompaniment to steaks, chicken, seafood or grilled vegetables.

Ingredients
- 4 full corn cobs, husks removed
- 75g unsalted butter, softened
- Zest of 1 lime
- Juice of ½ lime
- 1 garlic clove, finely grated
- ½ tsp sea salt
- ½ tsp chilli flakes (optional)
- Small handful fresh coriander, finely chopped
Method
1. Prepare the Lime Butter
In a small bowl, combine the softened butter, lime zest, lime juice, grated garlic, sea salt and chilli flakes. Mix until smooth and set aside.
2. Grill the Corn
Preheat your grill for direct medium-high heat.
Place the corn directly over the heat and cook for 15–20 minutes, turning every few minutes until the kernels are tender and evenly charred on all sides.
3. Finish and Serve
While the corn is still hot, generously brush with the lime butter.
Scatter over the chopped coriander and serve immediately with extra lime wedges on the side.

- For a deeper smoky flavour, cook the corn closer to the coals and allow a few kernels to blacken slightly.
- Add a sprinkle of grated Parmesan or crumbled feta before serving for an extra layer of flavour.
