Ingredients
- 12 fresh scallops in the shell (cleaned, with roe if desired)
- 3 cloves garlic, finely chopped
- 100g butter, softened
- 1 small bunch of parsley, finely chopped
- 1 small chili, finely chopped
- Zest and juice of 1 lemon
- Salt and pepper, to taste
- Olive oil, for drizzling
Instructions
- Preheat your grill to medium-high heat. You want the heat to be direct but not too intense.
- In a small bowl, mix the softened butter with the chopped garlic, parsley, lemon zest, lemon juice, chili, salt, and pepper.
- Rinse the scallops in cold water and pat them dry with paper towels.
- Open the scallops and leave them on the half shell.
- Place a small amount of the garlic herb butter mixture on top of each scallop.
- Place the scallops on the grill, shell side down.
- Cook for about 5–7 minutes, or until the scallops are just cooked through and the butter is bubbling and golden.
- Carefully remove the scallops from the grill using tongs and drizzle with a bit of olive oil for extra flavour. Serve hot with lemon wedges on the side.
