Ingredients

  • 12 fresh scallops in the shell (cleaned, with roe if desired)
  • 3 cloves garlic, finely chopped
  • 100g butter, softened
  • 1 small bunch of parsley, finely chopped
  • 1 small chili, finely chopped
  • Zest and juice of 1 lemon
  • Salt and pepper, to taste
  • Olive oil, for drizzling

Instructions

  1. Preheat your grill to medium-high heat. You want the heat to be direct but not too intense.
  2. In a small bowl, mix the softened butter with the chopped garlic, parsley, lemon zest, lemon juice, chili, salt, and pepper.
  3. Rinse the scallops in cold water and pat them dry with paper towels.
  4. Open the scallops and leave them on the half shell.
  5. Place a small amount of the garlic herb butter mixture on top of each scallop.
  6. Place the scallops on the grill, shell side down.
  7. Cook for about 5–7 minutes, or until the scallops are just cooked through and the butter is bubbling and golden.
  8. Carefully remove the scallops from the grill using tongs and drizzle with a bit of olive oil for extra flavour. Serve hot with lemon wedges on the side.
