🇦🇷 Argentinian Asado Grilling: Key Terms

Asado
The heart of Argentine BBQ culture. Asado means both the social event and the technique of cooking meat over an open wood fire or embers. In Argentina, it’s a ritual of community, patience, and flavour.
Parrilla (pa-REE-sha)
The traditional Argentinian grill used for Asado. It typically includes a height-adjustable grill, a firebox (brasero) for ember creation, and V-shaped grates that manage fat drippings.
V-Groove Grates (V-Slats)
V-shaped steel bars that channel fat and juices away from the flames into a drip tray. This prevents flare-ups and helps achieve consistent heat. Standard on all Flamery Asado grills.
Drip Tray
Collects juices from the V-slats to avoid flare-ups and can be used for basting or sauces. A signature feature of Argentinian BBQ grills and Flamery’s designs.
Brasero (Firebox)
A side-mounted box where wood burns down to embers. These embers are then raked under the grill as needed, allowing continuous heat control during long Asado sessions.
Asador

Chimichurri

Konro Grill
A compact, rectangular tabletop grill from Japan. Traditionally made of diatomaceous earth for insulation, though Flamery’s KONRO PRO.5.4 features a stainless steel and vermiculite-lined body for durability and performance.
Shichirin
The round version of a Konro grill, used for similar high-heat, small-portion cooking.
Yakitori
Japanese skewered chicken grilled over charcoal. A classic dish for Konro grills, but the technique applies to many skewered proteins and vegetables.
Binchotan Charcoal
