Griddle cooking offers several advantages that you can’t achieve with a regular grill grate. It’s ideal for meals that need a flat surface, high heat, and even distribution, such as crispy bacon, perfectly seared pancakes, stir-fries, or smashed burgers. It’s also perfect for foods that would fall through a traditional grill grate, like eggs, vegetables, or seafood. With your Flamery grill, you can enjoy all the benefits of a griddle without needing a separate appliance. Simply grab your Flamery Chapa plate and seamlessly switch from grilling over an open flame to cooking on a hot, flat surface to whip up a wide range of dishes.

Switch It

Setting up for griddle cooking is straightforward. If your v-groove grills are currently in place, the first step is to remove them. Make sure they’ve cooled down, or if they’re still hot, use gauntlets and place them safely out of reach of children or animals. Next, slot your Chapa plate into the frame. The lipped edge should fit neatly just behind the drip tray, securing it in place.

Add Heat

Preheat your griddle properly to ensure it’s hot enough for cooking. Lower the griddle close to the embers to let it heat up thoroughly. This process can take 10–15 minutes, depending on how hot your embers are.

If this is your first time using the Chapa plate, season it by lightly oiling the surface, letting it heat for about 10 minutes, and repeating the process. Use an oil with a high smoke point, such as vegetable oil or avocado oil. Before you start cooking, apply another thin layer of oil to the griddle to add flavour and prevent food from sticking.

The Food

Now that your griddle is ready, it’s time to cook! Griddle cooking opens up a world of possibilities, but here are some classics to get you started:

  • Smashed Burgers: Use a burger press to smash down the patties, creating a perfectly seared crust.
  • Breakfast Favourites: Pancakes, eggs, bacon, hash browns, and black pudding—the flat, hot surface makes griddle cooking a breakfast game-changer.
  • Fajitas and Stir-Fries: The even heat is ideal for cooking thinly sliced meats, onions, and peppers, all in one place.
  • Seafood: Delicate items like scallops, shrimp, or fish fillets cook beautifully on a griddle, getting a nice sear without falling apart.
  • Grilled Cheese Sandwiches: Make perfectly crispy, golden grilled cheese sandwiches with a crunchy exterior and melted, gooey inside.

Clean-Up

After enjoying your griddle-cooked feast, it’s essential to clean the griddle properly to maintain its performance and longevity. Use a spatula or a metal scraper to remove any leftover food or debris from the surface. Allow the griddle to cool down slightly then using a damp cloth or paper towel, wipe down the surface to clean away grease and residue. For stubborn spots, pour a little water onto the warm surface and use a spatula to scrub gently.
