  1. Marinate your pork butt the day before for the best results.
  2. Before marinating, allow 30 minutes for the pork butt to come to room temperature. Pat dry.
  3. Add your salt, paprika and sugar to a bowl and mix them together. Once mixed, generously rub the seasoning all over the Boston butt making sure to evenly cover it.
  4. Wrap tightly in tin foil & chill for 12 hours or overnight

 

Cooking Method

  1. Fire up your grill, build your embers, aiming for 130-145° Keeping the pork butt wrapped in foil, add to the coolest part of the grill for cooking over a long period of time.
  2. Add logs to keep a consistent temperature and cook for 5 hours.
  3. After 5 hours, check the pork by piercing the meat with a fork to make sure its tender. If tender, the pork should easily begin to fall apart after being twisted a little.
  4. For pulled pork skip, keep the pork wrapped up in its juices, brush again with the barbeque sauce and allow it to cook for a further hour. Remove from the heat and shred the meat using two forks
  5. If you like the crispy end pieces like us, remove the tinfoil and brush your barbeque sauce all over the pork, covering evenly and continue to cook for a further hour or until your pork begins to caramelise.
  6. Remove from heat and leave to rest for 30 minutes before tucking in with your favourite sides
