Ingredients

  • 2tbsp Olive Oil
  • 1 Courgette, thickly sliced
  • 1 Red Onion, cut into wedges
  • 1 Red Pepper, cut into chunks
  • 1 Yellow Pepper, cut into chunks
  • 12 Brown Mushrooms
  • 12 Cherry Tomatoes

 

Instructions

  1. Firstly, prepare your veg. Wash and cut all of your chosen vegetables into chunky pieces, button mushrooms may not need cutting.
  2. Next thread onto the skewers, alternating the veg for a rainbow affect. These steps can be done the day before, to save time on the day.
  3. Brush with oil and season with salt and pepper.
  4. If you haven’t already, fire up your grill, build your embers, and prepare a medium heat.
  5. Cook the skewers for 25-30 mins, regularly turning to ensure they are cooked on all sides.
  6. Once browned and slightly softened, remove from the heat and serve immediately.
