Ingredients

  • 12 large king prawns, shells on (cleaned and deveined)
  • 150g butter
  • 3 cloves garlic, minced
  • 1 red chili, finely chopped (adjust to taste)
  • Zest and juice of 1 lime
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh coriander for garnish (optional)

 

Instructions

  1. Preheat your grill to medium-high heat. You want the heat to be direct but not too intense.
  2. In a pan, either over the firebox or on a hob, melt the butter. Add the garlic and let it simmer for about 2 minutes, just before removing from the heat add the chilli.
  3. Remove from the heat, stir in the lime zest and juice, season with salt and pepper.
  4. Once cooled slightly transfer to a bowl, place the prawns in the marinade and toss to coat evenly. Let them marinate for at least 15 minutes (or up to 1 hour) in the fridge.
  5. Place the marinated prawns directly on the grill for about 3 minutes per side, or until the prawns are opaque and cooked through. The shells should be slightly charred and crispy.
  6. Tip: To ensure even grilling, turn the prawns only once. Avoid overcooking as they can become tough.
  7. Remove the prawns from the grill and garnish with fresh coriander, if desired.
  8. Serve with extra lime wedges on the side for squeezing.
